JAMMY DODGERS FOR YOUR LOVE!

You may have noticed my jammy dodger props all up on my instagram?

Well I though as a nice little launch gift for my website, I'd share the recipe with you! Just in time for Valentine's Day too - fancy that!

I've made mine vegan, but if you're not you can just sub the butter for dairy butter (especially if that's what you have in)!

So here goes!

Makes (about) 12 (depending on how big you make them I guess!)

INGREDIENTS

120g Vegan Butter (I use Vitalite)

55g Caster Sugar

140g Plain Flour

50g Spelt Flour

3-5 tbsp Jam of your choice

INSTRUCTIONS

  1. Cream together the butter and sugar.

  2. Mix in the flour in three parts until you can roll into a ball.

  3. Wrap the dough up in clingfilm and chill in the fridge for 20-30 minutes.

  4. Preheat the oven to 180°C and line a couple of baking trays.

  5. Roll out dough to about 5mm thickness and cut out your biscuit shapes - you should have about 24.

  6. Use a smaller cutter to cut out a little window in half of the biscuits.

  7. Bake for 10-15 minutes, turning occasionally for an even bake, until golden at the edges.

  8. Set biscuits aside to cool.

  9. Meanwhile, heat the jam in a small pan to thicken slightly, I do this to make it a bit stickier when the biscuits set.

  10. Once the biscuits have cooled enough, spread a small spoonful of jam on the non-holey biscuits (or as much jam as you fancy tbf)

  11. Sandwich with a holey biscuit - so it looks like a jammy dodger…

  12. Et voila!

I used the blackberry jam we made as favours for our wedding (cute huh?!) which worked really well but any jammy substance would work just great. I may try them with lemon curd next time!
