CHOCOLATE CITRUS LIFE IN FLAPJACK FORM

I've wanted to make these for ages, mainly because I've had some citrus peel in my cupboard and no other ideas of what to do with it, but also cos I thought it might taste pretty good. Don't mean to be a big head, but I wasn't wrong!

 

As always, I have pretty much winged them but I'm satisfied with the results! (And currently trying to stop myself shoving what's left of them straight into my face). If you like flapjacks, and you like orange flavoured chocolate, you should definitely give these a whirl.

 

Makes 18 pieces (unless you cut them bigger/smaller)

 

INGREDIENTS

 

400g Oats (GF if needed)

6 tbsp Cacao Powder

200g Citrus Peel

100g Butter (I use Vitalite for all it's vegan friendly goodness)

100g Dark Brown Sugar

150g Golden Syrup

1 ½ tsp Orange Essence (I use the Waitrose one - it's really great)

Zest of 1 Large Orange

75g Dark Chocolate (check this is vegan if it needs to be), bashed up into little pieces

 

 

INSTRUCTIONS

  1. Preheat the oven to 160ºC and line an edged baking tray. I used a 38cm x 26cm one from Ikea that looks like it's made purely for flapjacks but you could use a smaller one for deeper flapjacks, just leave them in the oven for a few more minutes.

  2. Mix together the oats, cacao and half of the citrus peel and set aside. 

  3. Weigh the butter, sugar and syrup straight into a sauce pan.

  4. Add the rest of the citrus peel, orange essence and half of the zest to the pan, then melt together over a low heat (the peel won't melt so don't worry about that).

  5. Pour the melted mixture into the oats mixture and stir well to combine.

  6. Pour mixture into your lined baking tray and smooth out until even with a spatula.

  7. Bake for 15 minutes.

  8. Take out of the oven and sprinkle over the bashed up chocolate before baking for a further 10 minutes.

  9. Remove from oven, sprinkle over the remaining orange zest then pat down the bigger chocolate chunks so it goes into the flapjack a bit more.

  10. Score out your pieces then leave to cool before properly cutting.

  11. Eat and hopefully enjoy!

* try adding some broken up almonds or walnuts for an extra crunch.
