Is it a cake or a bread? This is something that REALLY bugs me. I just don't know! I feel like the recipe is more cakey than bready though so we'll just go with that for now. I baked this one in a tray bake style and that's deffo more cakey!
I wanted to make a solid banana baked good recipe so I did a gooooood amount of research, decided what to sub the eggs for to make it vegan friendly for vegan friends, and had a go. I added in some vegan friendly (obvs at this point) dark chocolate and almonds for extra MMMMness too. Honestly, this is the BEST thing I've made ever that's banana based (and I've had a good few attempts including a very good run on a similar thing). It's super tasty but I also think baking it in a flat baking tray instead of a loaf tin works so well!
I also tried to limit the amount of sugar used cos it's nice for cakey things to be sliiiiightly better for you and wholemeal flour types cos I prefer them but you can deffo just sub for plain if you prefer that!
Makes 18 pieces (unless you cut them bigger/smaller)
INGREDIENTS
2 tbsp Ground Flaxseed
50g Almond Butter
30g Light Brown Sugar
170g Maple Syrup
2 tsp Vanilla Essence
350g Ripe Bananas (225g mashed, 125g sliced - approximately)
1 tsp Apple Cider Vinegar
150g Spelt Flour
100g Strong Wholemeal Flour
50g Jumbo Oats
1 tsp Baking Powder
1 tsp Bicarbonate of Soda
½ tsp salt
60ml Almond Milk
50g Flaked Almonds
50g Dark Chocolate, broken into little pieces
INSTRUCTIONS
Preheat the oven to 180ºC.
Mix the ground flaxseed with 6 tbsp water and set aside for a few mins.
Mix together the almond butter, maple syrup, sugar and vanilla until well combined.
Mix in the flaxseed water mixture, mashed banana and vinegar.
Stir in the sliced banana
In a separate bowl, combine the flours, oats, baking powder, bicarbonate of soda and salt.
Pour wet mixture into dry mixture and stir until well combined.
Add the almond milk to loosen up the mixture.
Stir in flaked almonds and broken chocolate.
Pour into lined baking tray (like one you may use for a tray bake / flapjacks) and spread out with a spatular until fairly even.
Bake for 20-25 minutes until golden and firm to the touch on top.
Cut up into portions you feel are adequate and enjoy.
